Where to Drink in Spain's Capital

Madrid Cocktail Bars: Where to Drink in Spain’s Capital

Madrid is a city that knows how to drink.

Wine spills into late-night dinners, vermouth is practically a ritual, and cocktail bars range from hidden, candlelit rooms to wildly theatrical spaces where the drink is only one part of the experience.

On our trip to Madrid, we explored several very different sides of the city's drinking scene. We drank wine standing at the bar in a neighborhood restaurant, searched for a cocktail bar hidden behind an unassuming entrance, and finished up surrounded by neon lights, Asian-inspired décor and some of the most playful cocktails of the trip.

If you're looking for the best cocktail bars in Madrid, these are the places that stood out.

Salmon Guru

Madrid's Wildest Cocktail Experience

If you only have time for one cocktail bar in Madrid, Salmon Guru should be high on the list.

From the moment you walk inside, it's obvious this isn't going to be a traditional cocktail experience. The room is colorful, loud and deliberately over-the-top, mixing neon, comic-book imagery and Asian-inspired design into something that feels halfway between a cocktail bar and an alternate universe.

And somehow, it works.

The décor alone is worth exploring. Illuminated bottles line the walls, elaborate parasols cover the ceiling, dragons and vintage graphics compete for your attention, and nearly every corner seems designed to make you stop and look.

But Salmon Guru isn't relying on its appearance to carry the experience.

THE COCKTAILS

The menu is just as unconventional as the room.

Rather than simply listing spirits and mixers, the drinks are presented almost like characters in a story. Ingredients can venture far outside the normal cocktail-bar playbook.

One drink on the menu, La Mano de Dios, combined Gin Mare, Fernet-Branca, lacto-fermented strawberries, balsamic vinegar and Pepsi Cola.

Another, Tierra, featured Beluga vodka with homemade beetroot cordial, sarsaparilla root, celeriac and carrot juice.

These aren't drinks designed to disappear quietly into the background.

They're meant to make you curious.

MORE THAN DRINKS

Salmon Guru also has a food menu that follows the same international, playful approach as the cocktails, with dishes influenced heavily by Asia.

Even the presentation becomes part of the fun. Food might arrive perched on a giant lucky-cat figure, while cocktails come in unusual glassware and vessels that make you wonder exactly what is going to arrive at the table next.

Our take: Come here when you want energy, creativity and spectacle. This isn't the place for a quiet Martini in a hushed room. Salmon Guru is about having fun with cocktails.

Best for: Creative cocktails, atmosphere, first-time visitors and a memorable night out.

Jack's Library

A Secret Madrid Cocktail Bar Hidden Behind a Florist

Jack’s Library takes Madrid’s speakeasy concept seriously. From the street, you won’t see a traditional cocktail-bar entrance. Instead, look for Bonsai Florist, an elegant storefront covered in greenery that gives almost nothing away about what is hidden inside.

A small brass plaque nearby offers the perfect clue:

“Don’t judge a book by its cover…”

Once you make your way inside, the secrecy continues. Photography is not allowed inside Jack’s Library, so you’ll have to experience the bar rather than document it. That rule actually adds to the atmosphere, keeping the intimate space free of phones and preserving some of the mystery for the next visitor.

The mood is dramatically different from the colorful chaos of Salmon Guru. Jack’s Library is darker, quieter and more refined—the kind of place that feels particularly well suited to ending a night of cocktails in Madrid.

Our take: Part of the fun of Jack’s Library is not knowing exactly what awaits behind the florist façade. We won't spoil it for you—and, thanks to the no-photo policy, neither will Instagram.

Best for: Speakeasy lovers, couples and anyone who enjoys a cocktail bar with a genuine sense of discovery.

El Jardín de Salvador Bachiller

Cocktails in a Secret Garden

Not every Madrid cocktail stop needs to be dark and hidden underground.

El Jardín de Salvador Bachiller offers almost the opposite experience: greenery, color and whimsical cocktail presentations in a garden-like setting.

It's especially good when you want a cocktail earlier in the evening rather than beginning with one of Madrid's darker late-night bars.

The drinks lean heavily into presentation. One of ours arrived in an elaborate gold vessel surrounded by the restaurant's lush, colorful table setting.

This is a place where the setting matters as much as what's in the glass.

Best for: An afternoon cocktail, groups and anyone looking for one of Madrid's most photogenic drinking spots.

How I'd Plan a Madrid Cocktail Night

Madrid's late dining culture makes bar hopping particularly easy. Rather than choosing five cocktail bars and racing between them, we'd build the evening around three or four stops.

Start somewhere relaxed for wine or vermouth. Move on to a destination cocktail bar such as Salmon Guru. Have dinner or snacks along the way, then finish somewhere intimate like Jack's Library.

The contrast is what makes Madrid fun.

You can go from a simple glass of Spanish wine to a cocktail containing fermented strawberries and balsamic vinegar—and somehow both experiences feel completely appropriate.

Is Madrid Worth Visiting for Cocktails?

Absolutely.

Barcelona often gets enormous attention for its cocktail scene, but Madrid deserves to be part of the same conversation.

What impressed us most wasn't simply the quality of the drinks. It was the variety.

In a single evening you can drink wine at a tiny neighborhood counter, sip a cocktail surrounded by plants, hunt for a hidden speakeasy and then walk into the sensory overload of Salmon Guru.

For cocktail lovers, Madrid isn't just somewhere to drink while you're sightseeing. The bars are part of the reason to visit.

Ferretería by EGO

Wine in a Former Madrid Hardware Store

Not every memorable drink in Madrid needs to be a complicated cocktail. Ferretería offers something completely different from the city's theatrical cocktail bars.

The space retains the character of the old hardware store that once occupied the location, giving it a distinctly Madrid feel. We stopped in for a glass of Spanish wine, enjoying it right at the bar—a simple experience, but one that provided a great contrast to the elaborate cocktails elsewhere on our night out.

This is the kind of stop that makes bar hopping in Madrid so enjoyable. One minute you're drinking wine in a historic neighborhood setting; later you're searching for a hidden cocktail bar behind a florist or surrounded by the neon spectacle of Salmon Guru.

Our take: Ferretería is a great addition to a Madrid bar crawl when you want to mix serious cocktail destinations with something more relaxed and distinctly local.

Best for: Wine, a casual stop between cocktail bars and experiencing another side of Madrid's drinking culture.

Don't Forget Madrid's Wine Bars

A Madrid drinking guide shouldn't be entirely about cocktails.

One of the simplest and most enjoyable experiences of the trip was stopping for a glass of Spanish wine at a casual neighborhood bar. There was no elaborate garnish, reservation or theatrical presentation—just a glass of red wine at the counter.

That's an important part of drinking in Madrid.

You can spend the evening chasing some of Europe's most creative cocktails, but leave room for the places where you simply walk in, order a glass of wine and join everyone else standing at the bar.
